I had some yellow squash from my garden that I needed to use. Since I love squash and casseroles so much I decided to try this recipe. FABULOUS!! My husband even ate it and liked it and he is the king of meat and potatoes. Thanks Rosecart

Finally got my daughters to eat squash without them complaining! I tried to make it a little more healthy so I could also enjoy it without too much guilt. Used less butter, egg substitute in place of eggs, less cheese & used spray butter on top instead of dotting butter on the top. Also added garlic powder & Ruscan Tuscan seasoning from Costco.

This is a wonderful way to use some of that garden bounty; it's delicious. I added a couple sliced carrots and a large clove of garlic, minced, to it to punch up the color and flavor and can see using broccoli, cauliflower and/or zuchinni to it as well. I didn't boil the squash and carrots, I sauteed them in 1 tbsp each of butter and olive oil for about 5 minutes and followed the instructions from there. I did add a pinch of my garden thyme to it also. Will definately make this again. Family loved it.

Great recipe! I did tweak it a bit though, for personal taste and based on what I had on hand. I used 2 yellow squash and 1 cucumber. I didn't have buttery crackers so I used good ol' saltines. Per a previous suggestion, I added some already cooked bacon into the squash while cooking. I also added 1 clove of garlic diced and some red onion chopped. In the egg mix I used a little less milk and added a dollup of sour cream. The end result was wonderful and the kids loved it! Thanks for a great recipe!

The best I have ever made, hands down. Didn't change a thing. Squash was not soggy, crackers were crunchy, flavors perfect with just salt and pepper as written.

I'd give this 10 starts if I could. Made it exactly as written. I really don't like squash, but someone gave me one and I thought it was a shame to waste it. After trying this recipe I will BUY the squash to make it. Just delicious. Thanks for great recipe!
