Wow what a great recipe! I actually used 8 med red potatoes, 7 med eggs, and 1/2 a large yellow onion. I soaked the minced onion in a bowl of cold water for about an hour to get rid of the oniony bite, while retaining the crunch!
I reduced the sugar to 1/3 cup, but it was still very sweet. Next time I will reduce to 1/4 cup. I used 1 1/2 tsp of cornstarch, and also added 1 tsp ground celery seed to the sauce before chilling, and when I mixed it with the mayo, I added 1 c. of drained sweet relish. (This is why I will reduce sugar to 1/4 c. The relish is plenty sweet!)
My batch is currently chilling in the fridge overnight, but preliminary taste tests by the Food Critic (aka my bf) have gotten rave reviews!
