  1. In a large skillet heat the Spectrum Organic Frantoio Olive Oil over medium high heat.
  2. Saute onion, celery, garlic until nicely browned and tender, add mushrooms and half the parsley.
  3. Add rice, Imagine Organic Low Sodium Free Range Chicken Broth, Hain Pure Foods Iodized Sea Salt and pepper.
  4. Bring to a boil, then reduce heat to a simmer and cook uncovered until liquid is absorbed, about 15 minutes.
  5. Transfer to a serving dish and sprinkle with toasted pecans and the remaining parsley.

Made this for the first time for Christmas Eve Dinner, VERY tasty and healthy! Served with Venison back straps. I did not use pecans since we did not have any, and it still tasted very yummy. Did not change anything besides used whatever brand of ingredients I normally use.

I don't know what went wrong, but this tasted too strong (like french onion soup with rice in it).

Not sure what I did wrong, but it was a little bland. I will try this again to see if I somehow missed something the first time because it just sounds so good!
