I made this for my family and it was a hit!! My son didn't even care that it had carrots in it. I used sugar free orange gelatin and it was great. Thank you so much for sharing!!!!

I modified it because my husband loves cottage cheese in his salad. I only put one can of pineapple with about 3/4 cup of pecans added to the food processor after blending the gelatin and cream cheese and pulsed a few times so the pineapple and nuts were chopped. Then I put the mixture in a large bowl, added about a large container of cottage cheese, the shredded carrots and the whipped topping. Delicious.

Yum, yum, yum!!! I've wanted to make this recipe ever since I first saw it in my hard-cover Light & Tasty cookbook (this recipe is from TOH). I finally got around to making this - as part of tonight's Easter dinner/get-together. My fiance and I invited good frineds and my parents over to celebrate Easter (we will be at his parents house tomorrow). Everyone RAVED about this (even my dad!)!!! As part of my dinner decor, I purchased small footed dessert dishes from Crate & Barrel. I used them for this pretty, mildly sweet salad. And, just like the picture shows, I also added leaves (mint) for garnish. Too cute! :-) My friends even "convinced" their picky "I hate all veggies" son to eat this! If you are trying to decide whether or not to give this a try, JUST DO IT! You'll be pleasantly surprised. :) This tastes just like a creamsicle (mmmm...)!!! It's also seasonally appropriate (being that it's made with carrots after all!). One thing to note: If you own a hand-held cheese grater (like the ones they use at Olive Garden, for example), it works like a charm to finely shred those carrots. I have a Pampered Chef one with two different grating drums (one coarse and one fine) and a cup to attach for easy measuring. Of course, you can use a good 'ol box shredder or a food processor too. Just a thought.... Thanks SO much for sharing your recipe!

This is a great salad. I had some friends over for a cookout and everyone loved it.....even my two year old who kept asking for "moe peese". Yum!
