"Fresh summer flavors that make an excellent topper for salads or sides with a bbq meal. Add a little cilantro for an extra fresh pop if you like. You could also spice it up with some fresh jalapeno. I designed this recipe myself, and my family loved it. I truly hope that you will try it and love it too!"

leftover roasted corn, kernels cut from cob
sweet onion, diced
1 1/2 teaspoons

cubed seeded watermelon
salt to taste
This sounded interesting so gave it a try. It really is a wonderful surprise of flavors! Go easy on the cilantro or you'll lose/over power the subtle flavor of the olive oil. I found a bit of fresh ground pepper to really bring out the flavors and preferred it over the cilantro. Yet, to each their own. Thanks Bis4Bethany for sharing!
