Great way to use up leftover ham, my only change was to add in a can of sliced button mushrooms and a couple of dashes of white pepper.

This was a desperation lunch, as in use what we have in the freezer/fridge no-food budget kind of thing. I took another reviewer's suggestion and pre-baked the hash brown patties for ten minutes before using them in the casserole. I used the last of the turkey ham I had in the fridge and I threw in some sauteed onion, red pepper, a cup of baby bella mushrooms and some fresh minced garlic. I served it with salsa and a dollop of reduced fat sour cream. We really liked this. With leftover skillet rolls and a quick pantry fruit salad, this made a filling brunch-lunch. Next time, I think I'll add more spices and maybe a little hot sauce.

I have been making this recipe since I saw it in the Taste of Home magazine years ago. We love it as it, but over the years I've varied the recipe. Sometimes I use cooked and crumbled sausage with green chilies and black olives. It is a big hit in my family!

Excellent recipe! Based on other reviews, I baked the hash brown patties for about 10 minutes, expecting them to brown a little. However, they didn't, so I don't know if this suggestion is necessary or not. Maybe I didn't bake them long enough though. We had this Christmas morning after opening presents and it was a big hit. I used Jimmy Dean's Fully Cooked Sausage Links instead of the ham, but otherwise cooked it exactly as instructed. We served it with homemade pancakes. So delicious! I think next time I will use half the cheese, but if you're a cheese lover then stick with the original amount. I just thought it was a little too cheesy. It was not too wet as others have reviewed. Thanks for the recipe! I will be making this one again... maybe for dinner!

Made this for Christmas breakfast and it was a hit!!! Will definitely make again! I took the advice of others and baked the hash browns for 20 minutes before adding the rest of the ingredients.

My whole family enjoyed this. I used frozen cubed hash browns and fried them with some onions first. Kept everything else the same. May add diced green pepper next time also.
