Ingredients

  • 2 teaspoons olive oil
  • 1 clove garlic clove, minced
  • 1 medium onion, thinly sliced
  • 1 pound large raw shrimp, peeled
  • 2 large tomatoes, cored and chopped
  • 1 teaspoon dried crushed oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 teaspoons lemon zest (outer yellow part only)
  • 1 (12 ounce) package Wacky Mac®
  • 2 teaspoons lemon juice
  • 1 cup reduced-fat feta cheese
  • Lemon wedges (optional)

Directions

  1. Heat oil in large nonstick skillet. Add garlic and onion. Cook over medium heat 5 minutes. Add shrimp. Cook for 2 minutes, stirring frequently. Add tomatoes, oregano, salt, pepper and lemon rind. Simmer for 5 minutes or until tomatoes are pulpy and shrimp is completely cooked.
  2. Meanwhile, cook Wacky Mac according to package directions. Drain. Stir Wacky Mac into shrimp mixture. Stir in lemon juice and feta cheese. Stir gently but well. Serve garnished with lemon wedges if desired.
