black plums, pitted and cut into thin wedges
cooked Wacky Mac® Veggie Spirals, rinsed under cold water, drained well
fresh baby spinach
plain fat-free yogurt (preferably Greek style)
minced fresh chives
1 1/2 teaspoons
white wine vinegar
This was great!! I needed a salad for a pot-luck, and had a bowl of fresh plums in the kitchen. My husband forgot to pick up the spinach on his way home so I made it without. I used whole grain rotelli pasta, cut up 4 plums, and added a tablespoon of mayonnaise to the dressing to make it a little thicker. I put a small bowl of blue cheese on the side in case anyone wanted it. It was a big hit! I think I'll have the small amount of leftovers on a plate of spinach for lunch tomorrow!!
