Vietnamese Spicy Sausage and Potato Soup

Directions

  1. In 4 quart saucepan or Dutch oven brown Italian sausage, carrots and onion over medium-high heat. Drain grease. Add Simply Potatoes®. Continue cooking, stirring occasionally, for 5 minutes.
  2. Reduce heat to low. Stir in Oriental kale, milk and seasoned salt. Cook, stirring occasionally, about 30 minutes or until potatoes are tender.

I made substitutions based on what was in my kitchen at the time. I used cooked spicy sausage, diced potatoes, evaporated milk plus water, half & half, and chicken broth, plus the carrots and kale. It tasted great, but my husband then came by and dumped in some curry powder which made it even better. The kale held up well. I'm not sure it's even the same recipe with this many subs, but it sure was great. If not for the subs, I'd give it a 5!
