I live alone & don't like the taste of Mayo. What I love about this recipe, besides the great taste, is the flexibility in portion. I can easily make a lot for a potluck, or just cook 1 big potato for a single serving just for me. And I like that you can also add other veggies, such as zucchini, shredded carrot, minced olives, and/or tomatos.

I used large head of broccoli (most likely more than what the recipe called for), a whole small yellow onion (instead of red), skipped the radishes & green pepper (didn't have any) and added a diced cubanelle pepper & 1/4 block of diced marble cheddar. I used a homemade salt-free seasoning and skipped the dill. I needed to use a little more dressing to compensate for the extra veggies I used. Tasty.

I love that this recipe is so healthful! We are really trying to watch our fat and salt intake, and since this recipe is fat free and uses no additional salt, I had to try it. The combination of the veggies is very good. I'm not a huge fan of fat free italian dressing, but it works in a pinch. I would have preferred a homemade vinagrette and will definitely use one next time. I added a heafty splash of lemon juice at the end to liven up the flavors. Thank you for this recipe!

This is a surprisingly delicious and refreshing salad. I think it is also very adaptable. It might taste even better with a little yellow or red bell pepper and some feta cheese. I'm definitely going to experiment. My very picky husband absolutely loved this recipe.

Great salad , such a nice refreshing variation from the classic mayonaise potato salad. some suggestions I used a vidalea onion instead of red and added some chunks of a nice provelone cheese !
