Vegetarian Nori Rolls

  1. In a large saucepan cover rice with water and let stand for 30 minutes.
  2. In a shallow dish combine soy sauce, honey and garlic. In this mixture marinate tofu for at least 30 minutes.
  3. Bring water and rice to a boil and then reduce heat; simmer for about 20 minutes, or until thick and sticky. In a large glass bowl combine cooked rice with rice vinegar.
  4. Place a sheet of nori on a bamboo mat. Working with wet hands, spread 1/4 of the rice evenly over the nori; leave about 1/2 inch on the top edge of the nori. Place 2 strips of marinated tofu end to end about 1 inch from the bottom. Place 2 strips of cucumber next to the tofu, then avocado and carrot.
  5. Roll nori tightly from the bottom, using the mat to help make a tight roll. Seal by moistening with water the 1/2 inch at the top. Repeat with remaining ingredients. Slice with a serrated knife into 1 inch thick slices.

This recipe is just EXCELLENT! It was my first time making any kind of sushi and I was very happy with the results. I am a vegan, so I substituted brown rice syrup for the honey and I also used short-grain brown rice. I will definitely make this again!

To the person who said not to wash your rice: Japanese always wash their rice (multiple times) as sushi rice is not supposed to be "sticky" but holds together just enough for preparing the recipe. Also, real sushi rice is a mixture of rice combined with seasoned rice vinegar before it is spread over the nori which gives it it's consistency for sushi. This is OK for an "Americanized" version of sushi.

Pretty good. But please, don't rinse your rice! Sushi rice is supposed to be sticky! That's like a Japanese person recommending that you leave the baking powder out of your biscuits, so "they're not too fluffy" !!!

There are soy sushi wrappers available for people who don't like the taste of nori. You can find them in asian stores sometimes and online ( has some).

It just wasn't for me. My husband said if I had ever tried and liked real sushi I would have liked it, he thought it was good and authentic.

This was my first time making and eating nori was a lot of fun! But, I've found I'm not too keen on nori. That aside, I think anyone enjoying nori would like this recipe. Although the rice vinegar also seemed a little strong. I might suggest the newbie forego the rice vinegar for the first bite. Fun recipe!

perfect recipe to get me over my fear of making sushi! colourful, flavourful and easy. looks beautiful too. made with crabmeat and tamari sauce. PLEASE dont forget to serve with pickled ginger! tasty!
