Turkey Picadillo II

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  •  
  • 1 1/2 teaspoons olive oil
  • 1 large yellow onion, chopped
  • 1 green bell pepper, chopped
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1/2 cup white wine
  • 1 (8 ounce) can tomato sauce
  • 1/3 cup chopped green olives
  • 1/3 cup raisins
  • 1/2 cup canned black beans
  • 1 tablespoon olive brine
  • 1 tablespoon capers
  • 2 teaspoons cayenne pepper, or to taste
  • 2 teaspoons ground cumin

Directions

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat and stir in the ground turkey. Cook and stir until the turkey is crumbly, evenly browned, and no longer pink. Remove the turkey and drain and discard any excess grease.
  2. Heat 1 1/2 teaspoons olive oil in the skillet over medium heat. Add the onions, bell pepper, garlic, and bay leaves; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the cooked turkey, wine, tomato sauce, olives, raisins, black beans, olive brine, capers, cayenne, and cumin. Simmer about 15 minutes.
