I have always hated the idea and the smell of cooked tuna, but one of my husband's favorite dishes from childhood was a variation (his mother hated noodles, so used rice). He wasn't fond of his mother's version any more, so I thought I'd give this a try... and so glad I did!
I used a low sodium mushroom soup, albacore tuna, sweet red bell pepper and added a bit of plain greek yogurt (about a third of the required mayo allotment) and wheat egg noodles. I added a few spices, especially smoked paprika. I didn't do the pimientos or green pepper.
Next time, I'll add a breadcrumb crust and green peas - but this was really easy to assemble, cook and wonderful to eat - I even went back for seconds!! GREAT recipe!
