Directions

  1. If broiling, pre-heat oven on broil to 350 degrees F. In a bowl, combine the tuna, celery, pickle relish, light mayonnaise and lemon juice, mixing well to create the 'tuna melt' mix. Down the center of each tortilla, place an equal portion of the tuna mix and top each with 1/4 cup of Cheddar cheese.
  2. Place each prepared tortilla on a broiler pan and place under the broiler (for microwaves, use a microwave-safe plate) and cook until the cheese begins to bubble (approximately 1 1/2-2 minutes). Once each tuna melt is cooked, fold the long end of the tortilla over ingredients and roll tightly and transfer them to individual plates.

Great for a quick and easy lunch! I used a bit less mayo and omitted the lemon juice. I added some garlic powder, salt, and pepper to the tuna salad. I used light cheese and added some sliced tomato. I wamed the tortilla and cheese in the microwave then added the tuna salad and tomato. These were great with a side of kettle cooked chips and dill pickles.

I tried this recipe because I was looking for something different for lunch that was fast and easy. I'll give it points for fast and easy. But otherwise I wasn't really impressed. I thought the amount of mayo was too much. Also, I cooked these up in the broiler, and a few of the tortillas were scorched black and unedible, even though I didn't broil them for as long as was called for. I pulled them out when they started smoking! Finally, the calorie count on this was a bit high considering the small serving size and the use of light mayo. I'd have to eat more than one serving to get full, and that's more calories than I want to consume for lunch.

This was a good lunch. I didn't change a thing. Next time I may just add a little more celery, for personal taste.

I followed the recipe without any changes. I work from home and this was a great change for a fast lunch.

I used one can of Albacore tuna in water, didnt have any relish so I just used dill pickle, added some diced red onion, garlic and replaced the cheddar cheese with monterey cheese. Brioled them in the oven for about 1-2 mins, then topped with a little seasoning salt. I highly recommend brioling these, the crispy texture the toritlla gets really complements this dish.
