Directions

  1. PREHEAT oven to 350 degrees F. Grease 13 x 9-inch baking pan.
  2. COMBINE cake mix, evaporated milk and eggs in large mixer bowl. Beat on low speed for 2 minutes. Stir in 1 cup pineapple. Pour batter into prepared baking pan.
  3. BAKE for 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire rack for 15 minutes.
  4. COMBINE sugar and 2 tablespoons reserved pineapple juice in small bowl; mix until smooth. Spread over warm cake, sprinkle with coconut and remaining pineapple. Cool completely before serving. Top with whipped cream, if desired.

Such an easy recipe and I received many rave reviews. I made the cake one night ahead and let sit at room temperature until it was time to serve - I did serve it with whipped cream and it did add the extra oomph! to polish the dessert off. It tastes like a moist yellow cake with hints of pineaple here and there - if you wanted to go for an even more tropical taste, you could add add another can of pineapple to the batter - but be sure to drain well!

WOW this cake was greattttttt I have never liked citrus and was doubtfull when I decided to make. But to my surprise it was mmmm good

Great! i added a layer of 1/4 c.butter creamed together with 1/2 c. brown sugar, 1/2 teas. cinnamon, and 1/2 c. chopped nuts to the bottom of the pans before pouring in the batter. Very very moist, freezes well.
