Triple Mashed Vegetables

Ingredients

  • 1 rutabaga, peeled and cubed
  • 6 medium potatoes - peeled and cubed
  • 6 medium carrots, peeled and sliced
  • 2 tablespoons butter
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. Place vegetables in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until very tender.
  2. Drain vegetables and transfer to a mixing bowl. Mash vegetables and add the butter, salt and pepper; beat until smooth and fluffy.
