This was a great recipe. I did change it a little bit though. Instead of stewed tomatoes, I used just a normal can of diced tomatoes. Also I didn't have cumin so I used 1 teaspoon of chili powder instead. I also added 1 small can of green chilies and I poured some frozen corn into the mix. When I cooked it all up, I actually used 1 frozen chicken breast so I stuck that in the pot first and let it boil in the juices while I added the other ingredients. I think it worked out pretty well that way because it kind of marinated the chicken as it cooked, giving it more flavor. I would definitely make this recipe again. Next time though I think I'll add an extra can of tomatoes.
This is good 4 stars recipe for a quick weekday dinner. I also made a cup of brown rice to go with it. My family loved it!
We LOVED this soup! I made it with hand shredded turkey (Thanksgiving leftovers, in fact), added about 1/3 c of canned corn, and simmered for 10 minutes and 20 minutes, instead of 10 and 3-5. I skipped the cilantro and cheese for serving, and made the Tortilla Snack Strips (cut much smaller than called for) for topping. My fiance (an ex-chef) was amazed when I told him how simple this recipe was, as it tastes like something that takes much more work!
This recipe was quick, simple,very low cost and much tastier than the $7.95 bowl of soup I purchased at a restaurant! I did add a can of diced tomatoes w/green chilies. It was perfect!
This recipe was a great inspiration! I live overseas and so a lot of the ingredients were not at my disposal. I used two chicken breasts and boiled them for three hours until they shredded easily. Then I used one can of diced tomatoes with my own Mexican spices. The cumin makes this soup! I also added a can of corn, which gave it a nice sweet surprise. I also used some flavored tortilla chips which were an additional flavor booster. I will definitely use this recipe again!!!

The best tortilla soup! I used Mild Rotel for the tomatoes, real chicken broth (added superior touch chicken broth), shredded turkey, no cilantro (didn't have it). So wonderful, thank you.
This was super easy and really good! I made it a little more filling by adding a can of black beans and a cup of brown rice.
