My roommate made this for a dinner party we had. Not only did it take less than 5 minutes to throw together, it tastes GREAT! I could have eaten just this salad for dinner and been completely satisfied.

Made this for Christmas Eve dinner at the in-laws. It was a hit! I would recommend only a 1/4 cup of onion though as it will otherwise overwhelm the other flavors. Also, I used halved Ciliegine mozzarella balls which when covered in balsamic vinegar resemble mushrooms. If you use Cilegine and have someone who doesn't like mushrooms, let them know in advance that it is mozzarella. It happened tonight :)
