This was amazing. I brought it to a party yesterday and everyone complimented it (the most complimented item there!) I just made a few adjustments... I used about 1/3 a cup of onion (instead of 1/2), I added some balsamic vinegar (to taste), I only added a little salt and pepper and I also added a second can of tomatoes (the second was also hunts diced to tomatoes but it had spices added already... I believe oregano, basil and garlic. - Note that I did NOT double any of the other ingredients in the recipe since this already had extra spices.)

Delicious and simple - my favorite kind of recipe. I left out the mozzarella; instead I spread goat cheese on top of each piece of bread before topping with the tomato mixture.

This is a very simple way for someone like me to be able to make a nice elegant appetizer. I have 4 kids and a picky husband, and it works for us!
