Tomato Bisque with Chicken

"Yummy and filling tomato bisque with tender pieces of chicken! Use a store-cooked chicken and a can of tomatoes, and this dinner will be ready before you know it! Definitely one of my 30-minute meals."

  1. Heat olive oil in a large pot over medium heat. Cook and stir onion and garlic in hot oil until onion is soft, about 5 minutes. Sprinkle flour evenly over the onion mixture; add tomatoes, chicken broth, oregano, basil, and parsley.
  2. Bring the liquid to a boil and cook until the tomatoes are softened, 8 to 10 minutes.
  3. Pour soup into a blender no more than half full. Cover and hold lid in place. Pulse blender a few times before leaving on to blend. Puree soup in batches until smooth and return to the pot.
  4. Stir chicken, heavy cream, sea salt, and pepper into the soup; simmer until the chicken is hot, about 5 minutes.

Excellent soup! I didn't have any Italian diced tomatoes, so I used one small can of stewed tomatoes and one small can of plain diced tomatoes. I followed the rest of the recipe exactly as written. Great depth of flavor! I blended everything using my immersion blender. A great way to use up leftover chicken. I'll be making this one again! As much of a carnivore as I am, I think I might even enjoy this more without the chicken. Delicious either way!

Didn't make any adjustments, made the soup just how it is directed and it was excellent! Easy and quick!!

Loved it! Used Amy's Tomato bisque since I didn't have canned tomatoes and then added real tomatoes about 6 small ones. I left out the chicken and used fresh parsley. We were sad we didn't make more - thanks for the recipe definitely a keeper!!
