This was delicious! I made a few changes. I substituted sesame oil for vegetable oil for cooking veggies (kept vegetable oil for the tofu, since that would get expensive). For the veggies, I started out with sauteing chopped garlic, ginger, and onion. I used fresh vegetables instead of frozen (have tried a number of different combinations, including mushrooms, broccoli, cauliflower, bell pepper, zucchini, squash, green beans, etc). I added some sriracha sauce to the egg mixture for spice. I also used much less peanut sauce (more like 3 tablespoons than 3/4 cup).
With these modifications, it takes me longer than 30 minutes, more like an hour start to finish.
