I have never worked with tofu before and this was AWESOME. I used the advice of others and froze this overnight in the package - then thawed out in hot water enough to get it out of the package - then defrosted for 3-4 mins in microwave. I found this article after cooking and wish I would have drained the tofu first http://vegetarian.lovetoknow.com/How_to_Freeze_Tofu . The tofu did have a nice sponge feel to it. I then dredged in flour then egg wash and finally the bread crumbs. I fried it because I was in a hurry, but next time I'll definitely bake them to be healthier and have a better consistency. I did make the mistake of not dividing the oregeno and put 2 teaspoons into my breadcrumbs, I didn't notice it being too overpowering. I put this into an 8x8" dish with sauce on bottom, half tofu, then cheese, tofu, sauce and cheese on the very top. I sprinkled with parmesan on top of that & baked for 20 mins. The whole time we ate it we said I can't believe I like this and it's healthy.
