I've tried other banana bread recipes that call for vegetable oil and using margarine or butter gives it a much better taste and not as greasy. I just made it again and modified the recipe like other reviewers. I doubled the recipe and used 1/2 c. margarine, 1/2 c. applesauce, 1 c. brown sugar, 2 c. AP flour and 2 c. whole wheat flour, added tsp vanilla and had a little over 3 cups of mashed bananas. Followed the rest of the ingredients and procedure. When mixing the dry ingredients into the egg and banana mixture fold with spatula until flour is incorporated. Don't over mix. The banana bread will be moist instead of rubbery and dense.
