  1. PROCESS pork in a food processor until coarsely chopped.
  2. SAUTE pork in a large skillet coated with cooking spray over medium-high heat 8 to 10 minutes or until meat crumbles and is no longer pink. Drain and cool.
  3. COMBINE pork, cilantro, and next 7 ingredients.
  4. STIR together vinegar, soy sauce, and olive oil. Drizzle over slaw, tossing to coat. Top with pork mixture; serve with cucumber slices, and if desired, rice. Garnish, if desired.

I don't know what I did wrong. It was too salty and sour and the mint was very overwhelming. I can't even begin to imagine how to doctor this one up to make it edible.

I've made this recipe twice now and it was very good the 1st time and even better the 2nd. I used packaged ground pork (you can easily get it at most grocery stores now) and sautéed it with a tbs of olive oil instead of cooking spray and put the red pepper on the pork while it cooked... along with a little salt. I used basil instead of mint both times and used ginger oil the 1st time and grated fresh ginger the 2nd - I think the fresh ginger brought a lot more flavor to the party. I made my own slaw using broccoli stalks (I just happened to have some on hand) along with some julienned carrots I also julienned the cucumber. We love all of the flavors, and the aroma while it's being prepared is absolutely mouthwatering. This is a great dish and I highly recommend it to anyone looking for something easy, tasty and different.

I liked this. It's different salad. I reduced the amount of mint , shredded the cucumber , added some more soy sauce, a bit more fish sauce and mixed it all together rather than layering it. I do think it tasted better with the rice added. I'll make this again sometime. Is a nice light dinner.
