Directions

  1. Heat the broth, coconut milk, rice and salt, if desired, in a 4-quart saucepan over medium heat to a boil.
  2. Reduce the heat to low. Cover and cook for 15 minutes or until the rice is tender. Let stand for 10 minutes. Sprinkle with the coconut and green onion, if desired.

This was a hit at a party some friends asked me to cook for. The key here is to use a can of FULL FAT coconut milk to give it the extra richness. A lady I spoke with used the boxed version of coconut milk and according to her, it was a disaster. I also used my rice cooker, since I had other things cooking, so that was a snap.
