1 onion, cut into long slices
1 red bell pepper, cut lengthwise into strips
1 yellow bell pepper, cut lengthwise into strips
1 chile pepper, minced
3 cloves garlic, chopped
4 boneless skinless chicken breasts, cut into strips
1 (15.25 ounce) can mango slices, with juice
1 1/2 cups plum sauce
4 cups cooked white rice
It is pretty sweet, not enough spice. But, it comes together well. Don't trust how it looks before you put in the plum sauce, it turns out darned tasty!
