Ingredients

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tablespoons honey
  • 2 tablespoons lemon juice
  • 1 teaspoon grated lemon peel
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 cups peeled, shredded sweet potato
  • 1 medium apple, peeled and chopped
  • 1 (8 ounce) can pineapple tidbits, drained
  • 1/2 cup chopped pecans

Directions

  1. In a bowl, combine the first seven ingredients; blend until smooth. In a large bowl, combine potatoes, apple, pineapple and pecans. Add dressing and toss to coat. Cover and refrigerate for at least 1 hour.
