This is only the second sweet potato pie recipe I've tried, but it was 10x better than the first! The spices were fabulous, to which I added allspice and vanilla, used salt substitute, and decreased the brown sugar by 1/4 cup. I doubled the recipe, but used three jumbo yams, so I ended up w/ THREE pies! Yes, I said THREE! Still not sure exactly how many pies the original recipe actually yields. I baked the yams & pie longer at a lower temp, just watching to make sure the crust didn't burn, which worked fine. Took one to work for 'hump' day & that became the happiest hump day ever! One co-worker said she doesn't like sweets too sweet and this pie was perfect! Another likes his sweets sweet, but still loved it, so I think I might stick to less brown sugar, since sweet sweets lovers can adjust much more easily to less sweet than the opposite. Can't wait to use this one for next family gathering! Thanks for a winner!!!
