This recipe didn't turn out for me at all! Okay, I took a couple of shortcuts so I can't really rate it one star. I used canned sweet potatoes (not in syrup though) and tried making mini cheesecakes in muffin tins rather than one big cheesecake. Still, I can't imagine why they wouldn't cook/set up at all and I don't believe it would have turned out much better by not taking the shortcuts. I don't think I'll be trying this one again... I'm actually not a big fan of baking with Splenda, but I love the idea of satisfying my sweet tooth without a ton of calories!
This is excellent! I am on a low carb diet - so I bake it in a 13 x 9" foil lined pan - delicious.
