  1. Preheat oven to 400 degrees F.
  2. Remove chicken giblets and neck. Rinse chicken under cold water; pat dry with paper towels. Sprinkle with 1 tsp. salt and 1/4 teaspoon pepper. Place chicken in large oiled roasting pan.
  3. Stuff cavity with lemon, garlic, and rosemary, if using. Wash hands. Scatter potatoes around chicken; sprinkle potatoes with remaining salt and pepper. Baste chicken and potatoes with butter.
  4. Roast, basting with pan juices, 1 1/4 hours, or until juices run clear when thickest part of thigh is pierced and temperature on instant-read thermometer reaches 180 degrees F. Transfer chicken and potatoes to platter. Discard lemon and rosemary. Skim off fat from pan juices; mash in garlic. Serve pan juices with chicken. (Refrigerate leftovers.)

I loved this recipe because it's so easy to prepare and the results are a juicy, delicious chicken with a hint of rosemary and lemon. Wonderful!

Very Good, I cooked it a little longer than the recipie said and the meat was falling off the bones when it was done. Very tender and juicy. I also used russet potatoes since I had no red potatoes on hand, but they still came out very good.

This recipe was delicious! I roasted some carrots along with the potatos. My husband and daughter thought it was very good. I will make this again soon!

wonderful flavor,chicken was nice and moist,I stuffed extra lemon and garlic and used thyme in the cavity.The potatoes were delicious after baking in those lemon garlic thyme chicken juices.My husband was thrilled and insists I make it again!
