Don't like fruitcake? You may change your mind with this one. Dried apricots, raisins, pecans, candied lemon and orange peel, candied cherries, chopped cranberries, and a can of cranberry sauce are folded into a spiced batter in this holiday favorite. Store the cake for several weeks in a covered container to mellow the flavors.

This is a very good cake for Christmas. Do not double this recipe. You don't need to age this cake. Pineapple extract can be substituted for almond extract if you'd like your cake even more pineapple tasting! Originally submitted to CakeRecipe.com.

This is the fruitcake my mother made from the time I was a little girl. It isn't full of the citrus fruits, and I've never met anyone who didn't like it. Originally submitted to CakeRecipe.com. You can use fruit juice instead of the brandy, if you prefer.
