These were very good for stuffed peppers-a stuffed pepper can only be so exciting. My husband has an aversion to simple, healthy food but even he liked these. I subbed out the ground beef for lean ground turkey and used brown rice instead of white for an added fiber boost. Also, I used low sodium tomato sauce--which didn't hurt because I seasoned the turkey. Added a little light parmesan and part skimmed cheddar cheese on top. All in all, we both really enjoyed these.

I was really not impressed with this recipe, it seemed bland to me. Wont be making it again. I even added additional worcestershire sauce, and sauteed the meat with onion.. and it was still bland. I tried making it twice, and will have to find a different recipe. Bummer since 6 bell peppers and meat are not the cheapest :/

I grew up eating stuffed bell peppers and so I wanted to try making them myself! This recipe is wonderful and my husband asked me to make them again soon. Some one had said to blanch the peppers before cooking them and I did. They were great! I can remember the peppers being a little soggy when my mom made them and this time they had a better texture. :)

Very good! Next time I will decrease the ratio of rice to meat, and won't use any green peppers--just red and yellow!

I have made these twice now, first time as the recipe states and they were very good. We like things spicy so the second time i added smoked paprika, and some cumin, and added extra of the specified seasonings. I topped it off with adding home made hot salsa to take it to the next level. This summer i will try to freeze them with extra peppers from the garden. :)

This was a really good recipe. The rice I use to stuff is lightly fried in a little bit of oil until it just starts to brown, then I add the water and about a tbsp or so of chicken and tomato seasoning, stir then let cover and cook as usual. I add cheese to the stuffing mix and top with cheese at the end.
