1 (8 ounce) package cream cheese
1/2 cup confectioners' sugar
2 teaspoons vanilla extract
12 large fresh strawberries, hulled

2 tablespoons graham cracker crumbs
2 (1 ounce) squares semisweet chocolate chips (optional)
1 teaspoon canola oil (optional)

Directions

Line a baking sheet with waxed paper.
Beat together the cream cheese, confectioners' sugar, and vanilla extract in a bowl until smooth.
Spoon the mixture into a piping bag fitted with a large round tip.
With a sharp paring knife, cut a cone shape out of the top of each strawberry to leave a small hollow.
Pipe about 1 tablespoon of the cream cheese filling into each strawberry, making sure that the filling overflows a bit out of the top of the strawberry.
Place the graham cracker crumbs into a shallow bowl. Dip the filled side of the strawberry into the graham cracker crumbs, coating the exposed filling with crumbs.
Melt the chocolate and canola oil in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each interval, until warm and smooth, 1 to 3 minutes (depending on your microwave).
Dip the unfilled ends of the strawberries into the melted chocolate and place on the prepared baking sheet; refrigerate until set.

These were just okay. I prefer strawberries dipped in chocolate much more. I thought this was too much effort for little payoff. They didn't taste anything like cheesecake to me.

These were awesome! To cut calories I used Equal instead of sugar and low fat cream cheese. I crushed cinnamon graham crackers instead if plain ones. Next time I will dip in chocolate...Yummm!

I wanted to do it faster so I used a ziplock-style bag and cut the hole too big. Start over. What a mess I made and I'd do this mess all over again. There really are not enough left on the plate to share. Okay, one or two for DH...provided he gets home early...! Strawberries, cream cheese and chocolate? Pure TNT!! And I was going to put the berries into a salad...Silly me!

Tip: An egg carton works great for propping up the strawberries for quick fill. Great recipe... the combination of ingredients speak for themselves as a delish combo! Just made them for a BBQ tomorrow and I'm anticipating great reviews!

HUGE hit with my crowd. Super easy to make. I had huge stawberries and I didn't stray from the recipe and it was perfect. Plenty of filling for all the berries. I didn't have a problem with it being loose at all. Wouldn't change it a bit. Thanks!!

AWESOME! I added some cocoa powder to the cream cheese mixture to make it chocolate, just because I was in the mood, but followed the recipe otherwise, dipping it in the optional chocolate and decorating them w/ white chocolate drizzle and sprinkles. Of course I couldn't wait for dessert tonight to try them, so I tried one now and they are really, REALLY good! My strawberries were pretty small and not the best, but they still turned out great! Can't wait to make these w/ better ones. Thanks, Alex, for sharing this wonderful spin on choco. dipped strawberries! :)
