Strawberry Asparagus Salad

Ingredients

  • 1/4 cup lemon juice
  • 2 tablespoons vegetable oil
  • 2 tablespoons honey
  • 2 cups fresh asparagus, cut into 1-inch pieces
  • 2 cups sliced fresh strawberries

Directions

  1. In a small bowl, combine lemon juice, oil and honey; mix well. Cook asparagus in a small amount of water until crisp-tender, about 3-4 minutes; drain and cool. Arrange asparagus and strawberries on individual plates; drizzle with dressing.
