Delicious! Recommend adding salt to the chicken to suit your tastes while cooking. We made a homemade balsamic vinnaigrette which is another recommendation!

This was an excellent salad! Very filling and hearty :) I made it with baby spinach, cucumber, tomatoes, red peppers, avocado and made my own balsamic vinaigrette (3/4 extra virgin olive oil, 3/4 balsamic vinegar, 1/2 tsp oregano, 1-2 tsp mustard, 1 clove garlic, dash of salt and pepper).

Absolutely delightful medley of flavors & textures. I skinned & de-boned thighs (much prefer the dark meat). Rather than balsamic salad dressing, I used a quality balsamic vinegar, roughly 1/2 cup and mixed in about 1/2 tsp finely minced fresh garlic per serving to give it a bit more zing (and we do love garlic here!). Be sure to use a good quality balsamic - it is important to the final dish. I also used finely shredded fresh Parmesan. No leftovers and the bowls were all but lapped clean. My discriminating bride gave it an enthusiastic 5 stars. Thanks for sharing - this is one *outstanding* recipe.

Delicious!! My husband & daughter loved it and so did I. This is perfect for hot Summer days when you don't want to slave for hours over the stove, plus it's extremely healthy. I used a berry balsamic dressing and the salad became a definite family favorite.

Loved this salad! I left out the bell pepper because we don't like it, and I made my own vinaigrette, but didn't change anything else. Very good, simple to make and quite filling. Will definitely be on our summer rotation. Thanks for sharing!
