2 (10 ounce) packages
baby spinach, cleaned
BACARDI® Limon Rum
key lime juice
extra virgin olive oil
Very tasty salad. It looks nice, too. I thought that the dressing ended up a bit watery. If I made this again I would use less olive oil.
Also, I used regular lime juice with a couple tsp. of sugar, because key lime juice was not available. The dressing was still a bit tart, but it was liked by all.
