Ingredients

  • 1 (8 ounce) boneless beef top loin steak
  • Chipotle Honey Mustard Dressing (recipe below)
  • 4 cups DOLE® Spinach
  • 1/2 cup sliced cucumber
  • 1/4 cup sliced red onion
  • 1/4 cup diced red bell pepper
  • 1/4 cup crumbled feta cheese
  • 1/4 cup canned prepared fried onions (optional)

Directions

  1. Brush steak with 1 tablespoon Chipotle Honey Dressing.
  2. Grill or broil steak to desired doneness.
  3. Let stand 5 minutes before cutting into thin slices.
  4. Divide spinach, cucumber, red onion and red pepper on two large plates.
  5. Arrange sliced steak on top of each.
  6. Drizzle with Chipotle Honey Mustard Dressing, to taste.
  7. Sprinkle with feta cheese and onions, if desired.

Footnotes

  • Chipotle Honey Mustard Dressing:
  • Whisk together 1/4 cup light mayonnaise, 3 tablespoons water, 2 tablespoons each whole grain mustard, Dijon-style mustard, honey and 1/2 to 1 teaspoon chipotle chile powder. Makes about 3/4 cups.
