3.5 stars. Don't get me wrong: this is an easy and delicious dish. My problem is that the recipe is lacking in some details and I think some of the listed amounts are plain wrong. For example, what constitutes a "bunch" of spinach leaves? Also, I confirmed my suspicion that the entire 10 oz. pack of tortillas is way too much for a single 13x9 pan. I had to double the amount of sauce listed. Finally, the recipe should include a recommendation for preparing the corn tortillas. To that end, I had great success warming the tortillas on a stainless steel pan. For each tortilla, I sprayed oil on both sides, and then I warmed each side on the pan over medium heat for 15 seconds (30 seconds total for each tortilla). This method accomplished two goals: 1) It made the tortillas pliable for the assembly. 2) It allowed the tortillas to firm up during baking so that the cheese and sauce wouldn't reduce them to mush. Next time, I'm going to try this recipe with some washed, frozen spinach and red sauce.
