Ingredients

  • 6 large potatoes, cubed
  • 2 red bell peppers, seeded and diced
  • 1 1/2 serrano chiles, finely chopped
  • salt to taste
  • ground black pepper to taste
  • 1 dash paprika
  • 2 tablespoons vegetable oil
  • 8 cups water

Directions

  1. In a saucepan, fry potatoes in oil until golden brown.
  2. Stir in peppers, water, and seasonings. Cover, and simmer until potatoes are tender.
