Spicy Kielbasa Soup

Ingredients

  • 1/2 pound reduced-fat smoked turkey kielbasa, sliced
  • 1 medium onion, chopped
  • 1 medium green pepper, chopped
  • 1 celery ribs with leaves, thinly sliced
  • 4 garlic cloves, minced
  • 2 (14.5 ounce) cans reduced sodium chicken broth
  • 1 (15.5 ounce) can great northern beans, rinsed and drained
  • 1 (14.5 ounce) can stewed tomatoes, cut up
  • 1 small zucchini, sliced
  • 1 medium carrot, shredded
  • 1 tablespoon dried parsley flakes
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon pepper

Directions

  1. In a nonstick skillet, cook kielbasa over medium heat until lightly browned. Add the onion, green pepper, celery and garlic. Cook and stir for 5 minutes or until vegetable are tender. Transfer to a slow cooker. Stir in the remaining ingredients. Cover and cook on low for 8-9 hours.
