Excellent, foolproof, chicken recipe. I found myself making this recipe so often I changed the serving size to 40 and reprinted it so I could keep a large batch of the spice mixture on hand. Having the spices already combined makes for a very fast and easy last minute dinner. I always butterfly and pound the chicken thin before adding the spices and I am very heavy handed with the rub, generously coating both sides of each piece of chicken. I serve this most often with spanish rice and sweet mexican corn cake. Also good cut up and served wrapped in grilled totillas or on a bed of tortilla chips with salsa and melted cheese. PERFECT with margaritas! After three years of using AR and over 800 recipes saved, this is by far my picky eater husbands most requested recipe. My husband even begs me to make it for company and it always receives good reviews even requests for the recipe.
