This pound cake is amazing! I made it for my step father who is really particular about his pound cakes, and he loved it! It's super flavorful and moist. You can definitely taste the hint of coconut from the extract without getting an overwhelmingly coconut flavor. The texture comes out almost like a fudgey consistency. The only thing I had to alter was the baking time. Had to bake it for an extra 10 minutes to achieve the appropriate doneness.
