Ingredients

  • 1 cup white sugar
  • 1 tablespoon butter
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup pumpkin puree
  • 1/2 cup chopped walnuts
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Cream together sugar and butter. Add egg, vanilla, pumpkin and walnuts.
  3. Stir in flour, baking powder and salt; mix well.
  4. Drop by the tablespoon on cookie sheet and bake for 15 minutes.
