  1. Place fish in single layer in shallow baking dish. Sprinkle lime juice over fish.
  2. Combine tomatoes, olives, salsa, coriander and oregano in small bowl; spoon over fish.
  3. Bake in preheated 350 degrees F oven 20 minutes or until fish is opaque. Sprinkle cheese evenly over fish; let stand 3 minutes or until cheese is melted. Serve with lime wedges, if desired.

Easy to assemble, easy clean up, nice flavor. I didn't have any coriander on hand, so had to skip that, and used Sargento Monterey Jack cheese slices that needed to be used, other than that, followed the recipe, almost a first!
