I made the recipe as described, with the exception of the finish. I pan fried the chicken, baked my bacon (I always do this - it tastes better), used my bacon drippings with the brown sugar to caramelize the onions. After that I layered them as directed but I used sliced provolone cheese instead of shredded monterrey jack because that was all I had. Anyway, I stuck it back in the oven about 1.5 minutes to melt the cheese and that was that. I made some without the onions for my kids and they loved it. I think these would go great over some lightly toasted wheat bread, with light mayo, lettuce and tomato. Excellent recipe!
