Delicious! Instead of putting dill in the mixture, I bought salmon that was already seasoned with dill.

I felt this had so much potential, but it ended up being reminiscent of my mom's hot tuna sandwiches from when I was a kid (you know, the ones on hamburger buns wrapped in tin foil?). I expected a more sophisticated flavor. One good thing, though- the cream cheese mixture, minus the cheese and salmon, had a great flavor and would be good as a cheese spread on crackers.

The quesidillas were awesome. A little bit of the spread should be used so that all flavors can be tasted. The changes I made were minimum. I bought fat free cream cheese, Dannon Plain Yogurt instead of sour cream, added onion powder, garlic powder and sea salt to the spread for more flavor and kept all else the same. My husband and young children tried a sample and loved it. Thank you for your recipe. This can also be served as a good appetizer.

YUM! These were quick and easy, and my husband & I loved them. This is a great way to utilize salmon if you need to make a little go a long way. The quesadillas would make delicious appetizers, but we happily ate them as our main dish. Next time I may add some chopped chives, but they are wonderful as the recipe is written!

I made this as written except I used the package of smoked salmon which is 6 oz. In the past my husband and I have made these quesadillas using a different recipe calling for diced green chilis. After tasting this recipe's mixture it needed a little something. And this could be that I was use to the kick of the chilis. So, I ended up using half a can anyhow (2 oz). Very yummy and an easy fix. The little kids love it too which is saying a lot! *I had a lot of cheese/salmon mixture left over since I didn't make 4 tortillas, and I have to say it made a great dip with table water crackers the next day. The crackers were sturdy and really let the flavors come through. Will make this for a party for sure. I love double duty recipes!

We used cheddar cheese and BBQ smoked salmon so I omitted the dill but my kids loved these and asked for more. Our salmon was really oily so next time I will try to pat some of the grease off first because we had to use a lot of napkins but otherwise we will make these the next time we have extra salmon.
