Slow Cooker Pork Tenderloin with Beer and Veggies

By: Childe
"The beer -- I like to use Molson Canadian, but any brand will do -- is the key to this simple but delicious slow cooker recipe. Add your favorite spices to give it a different flavor. This recipe is very flexible! And best of all, the leftovers can be used for pulled pork, stew, or sandwiches."

Ingredients

  • 1 (2 pound) pork tenderloin
  • 6 fluid ounces lager-style beer (such as Molson Canadian ®)
  • 2 tablespoons white wine vinegar
  • 2 potatoes, quartered
  • 2 carrots, quartered
  • 6 button mushrooms
  • 2 cloves garlic
  • 1/2 small onion, cut into chunks
  • 1 1/2 teaspoons salt
  • 1 teaspoon whole black peppercorns
  • 1 teaspoon dried sage

Directions

  1. Combine the pork tenderloin, beer, vinegar, potatoes, carrots, mushrooms, garlic, onion, salt, peppercorns, and sage in a slow cooker. Cover and cook on low for 4 hours.

Footnotes

  • Cook's Note
  • Do NOT use Lite beer for this recipe. With a proper Canadian brew, the flavour will be subtle. If you use a weak beer, you probably won't get any flavour at all.
