Absolutely enjoyed making this and LOVED each bite. To add more umph I added chopped celery and fresh diced tomatoes. I'm not a huge fan of sour cream and I like to keep my meals light, so I used non-fat plain greek yoghurt as a topping (it really rounds out the flavors) and a dash of sriracha sauce. I also didn't have 7 hours to cook this, so I put it on high, and halved the cooking time. So 2.5-3 hours on high to cook the chicken, then once cooled and shredded, another 1-1.5 hours. Seriously amazing stuff. Thanks for sharing!
