Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts
  • 2 eggs, beaten
  • 1 cup Italian seasoned bread crumbs
  • 2 tablespoons vegetable oil
  • 1 (28 ounce) can RED GOLD® CRUSHED TOMATOES or REDPACK® CRUSHED TOMATOES in THICK PUREE
  • 1 1/2 cups shredded mozzarella cheese

Directions

  1. Preheat oven to 375 degrees F. Dip the chicken breast in egg and then breadcrumbs. Heat oil in a large skillet on medium high heat. Brown chicken on both sides and drain on a paper towel.
  2. In an 11x7 inch baking dish evenly spread 1/2 of the RED GOLD® or REDPACK® CRUSHED TOMATOES. Arrange chicken on sauce and top with remaining RED GOLD® or REDPACK® CRUSHED TOMATOES. Sprinkle with cheese and bake for 25 minutes or until chicken is no longer pink.

  • Tip:
  • When you buy chicken, look for a ‘sell by’ label on the package. Most chicken processors specify the last day poultry should be sold. Avoid packages with expired dates.
