Original Recipe Yield 1 -9 inch tube pan
 

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 3/4 cup butter
  • 3/4 cup white sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 2 cups golden raisins
  • 1/4 cup raisins, chopped
  • 1/2 cup chopped candied mixed fruit peel

Directions

  1. Preheat oven to 325 degrees F (165 degrees C). Grease one 9 inch tube pan.
  2. Sift flour, baking powder, and salt together.
  3. Cream butter or margarine and sugar together. Beat in the eggs one at a time. Stir in the vanilla and the sifted flour mixture. Fold in the raisins, and candied peel mixing well. Spoon batter into the prepared pan.
  4. Bake at 325 degrees F (165 degrees C) for 1 hour and 45 minutes to 2 hours. Makes about 16 servings.
